Description

These Airfryer Sweet Potato and Carrot Bites are a perfect finger food for babies, combining nutritious mashed sweet potato and carrot with savory rosemary and garlic. They are lightly bound with egg and Greek yogurt, with oat flour adding structure, all cooked quickly in an air fryer to achieve a golden, tender bite. Ideal for healthy snacking or baby-friendly meals, these bites can also be baked if preferred.

Ingredients

Scale

Base Ingredients

  • 180 g (3/4 cup) mashed sweet potato
  • 180 g (3/4 cup) mashed carrot
  • 1 tsp finely chopped rosemary
  • 1 tsp garlic granules

Binding Agents

  • 1 egg
  • 3 tbsp Greek yogurt

Dry Ingredients

  • 90 g (1/2 cup) oat flour plus extra for dusting

Cooking

  • 3 tbsp olive oil

Instructions

  1. Mix Ingredients: Add all of the ingredients into a large mixing bowl and stir well until fully combined into a smooth, cohesive mixture.
  2. Prepare for Shaping: Sprinkle a little extra oat flour on a plate to prevent sticking. Use a tablespoon to divide the mixture into small portions suitable for finger bites.
  3. Cook in Air Fryer: Place the shaped bites into the air fryer basket, ensuring they are spaced apart slightly. Cook for 12 minutes at 180ºC (356ºF) until the bites are golden and cooked through. Alternatively, place bites on a baking tray lined with parchment paper and bake in a preheated oven for 20-25 minutes until golden.
  4. Serve: Serve the bites warm with a sauce of your choice, optionally garnished with a sprinkle of fresh parsley for added flavor and visual appeal.

Notes

  • Oat flour can be substituted with gluten-free flour if needed for dietary restrictions.
  • Ensure sweet potatoes and carrots are well mashed to create a smooth texture suitable for babies.
  • Adjust cooking time slightly based on your air fryer model and size of bites.
  • These bites can be refrigerated for up to 3 days or frozen for longer storage.
  • Serve with mild dipping sauces appropriate for babies, such as mild yogurt dip.
