- 2 green onions (scallions), sliced
- 1 head of bibb or butter lettuce
Sauce and Seasonings
- 3 tablespoons fish sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 1 teaspoon honey
- Pinch red pepper flakes
Instructions
- Prepare the sauce: In a bowl, combine fish sauce, soy sauce, rice vinegar, sesame oil, honey, and red pepper flakes. Stir well to blend all flavors, then set the sauce mixture aside.
- Brown the chicken: Heat a large skillet over medium-high heat. Add ground chicken and cook, breaking it up with a spoon, until it is browned and cooked through, about 6-7 minutes. Drain any excess liquids from the skillet to avoid sogginess.
- Add vegetables and sauce: Add the prepared sauce along with grated carrot, minced celery, and sliced shiitake mushrooms to the skillet. Stir well to combine and cook for another 6-7 minutes, allowing flavors to meld and vegetables to soften.
- Finish with crunch and freshness: Stir in the chopped water chestnuts and sliced green onions. Cook an additional 2-3 minutes to heat through, then remove the skillet from heat.
- Assemble and serve: Carefully separate lettuce leaves and spoon the chicken mixture into the center of each leaf to create individual wraps. Garnish with optional sesame seeds and sriracha sauce if desired, and serve immediately.
