Description

This Baked Greek Lemon Chicken recipe features tender boneless, skinless chicken thighs marinated in a flavorful blend of lemon juice, olive oil, garlic, and aromatic herbs. Perfectly baked to juicy perfection and finished with a quick broil for a golden brown crust, this dish offers a delightful balance of tangy, savory, and herbaceous flavors ideal for a family dinner or entertaining guests.

Ingredients

Scale

Chicken & Marinade

  • 8 boneless, skinless chicken thighs
  • Juice of 2 lemons
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 3 teaspoons Dijon mustard
  • 3 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon dried dill
  • 1 teaspoon paprika
  • 2-3 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Marinate the Chicken: In a large bowl or ziplock bag, combine the chicken thighs with lemon juice, olive oil, minced garlic, Dijon mustard, oregano, thyme, dill, paprika, kosher salt, and black pepper. Mix well to thoroughly coat the chicken. Cover and refrigerate for 2 to 6 hours to allow the flavors to infuse.
  2. Preheat the Oven: Preheat your oven to 350°F (177°C). Prepare a baking dish by lightly greasing or lining it as desired.
  3. Arrange and Bake: Place the marinated chicken thighs in the baking dish in a single layer. Pour any remaining marinade over the top to keep the chicken moist. Bake in the preheated oven for 40 minutes, or until the internal temperature reaches between 165°F and 175°F (74°C to 79°C), ensuring the chicken is fully cooked.
  4. Broil for Color: For a beautifully golden brown finish, switch the oven to broil and cook the chicken for an additional 2 to 3 minutes. Keep a close eye to prevent burning.

Notes

  • Marinating the chicken overnight will intensify the flavors but at least 2 hours is recommended for a good flavor infusion.
  • Use a meat thermometer to ensure the chicken is cooked through and safe to eat.
  • Serve with a side of Greek salad or roasted vegetables for a complete meal.
  • This recipe works well with bone-in chicken thighs but will require a longer cooking time.
  • Adjust salt quantity based on your preference and the saltiness of the mustard used.
