Description

This recipe for Baked Jamaican Chicken Wings offers a flavorful Caribbean twist on classic wings, infused with a vibrant marinade of allspice, smoked paprika, and fresh ginger. Perfectly baked until golden and crispy, these wings are ideal as a spicy appetizer or party snack.

Ingredients

Scale

Chicken Wings

  • 2 pounds chicken wings, separated into flats and drumettes

Marinade & Seasonings

  • 2 tablespoons olive oil
  • 1 tablespoon allspice
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons fresh grated ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for baking the wings evenly.
  2. Prepare Chicken Wings: Pat the chicken wings dry using paper towels to help the marinade stick better and promote crispiness during baking. Place wings in a large bowl.
  3. Make Marinade: In a small bowl, mix olive oil with allspice, smoked paprika, garlic powder, onion powder, ground cinnamon, ground nutmeg, cayenne pepper, salt, black pepper, and brown sugar. Stir in soy sauce, lime juice, fresh grated ginger, minced garlic, and chopped green onions until well combined.
  4. Marinate Wings: Pour the marinade over the chicken wings and toss thoroughly to coat each piece. Cover and refrigerate for at least 30 minutes, or preferably overnight, to allow the flavors to deeply penetrate the meat.
  5. Arrange for Baking: Place a wire rack over a baking sheet lined with foil for easy cleanup. Arrange the marinated wings in a single layer on the rack ensuring they are not touching, which facilitates even cooking and crispiness.
  6. Bake Wings: Bake in the preheated oven for 40-45 minutes. Turn the wings halfway through the cooking time to promote even browning on all sides. Wings should be golden brown and fully cooked through.
  7. Broil for Crispiness: For an extra crispy finish, switch the oven to broil mode and broil the wings for an additional 2-3 minutes. Keep a close eye to prevent burning.

Notes

  • Serve the wings with fresh lime wedges and a cooling dip such as ranch or yogurt sauce to balance the spicy flavors.
  • To increase the spice level, add additional cayenne pepper or include Scotch bonnet peppers in the marinade for authentic heat.
