Description

Blueberry Swirl Yogurt Bites are a healthy and delicious frozen treat made with creamy Greek yogurt, sweetened honey, and fresh blueberry swirl. Perfect as a refreshing snack or light dessert, these bites combine the natural tang of yogurt with the sweetness of blueberries, accented with optional crunchy toppings like granola or nuts.

Ingredients

Scale

Blueberry Swirl

  • 1/2 cup fresh blueberries
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon lemon juice

Yogurt Base

  • 2 cups plain Greek yogurt (full-fat or non-fat, your preference)
  • 1/4 cup honey, plus more for drizzling (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Toppings (Optional)

  • 1/2 cup fresh blueberries
  • Granola
  • Chopped nuts
  • Shredded coconut

Instructions

  1. Prepare Blueberry Swirl: In a small saucepan, combine 1/2 cup blueberries, sugar, and lemon juice. Simmer over medium heat for 5-7 minutes, stirring occasionally, until thickened. Mash gently with a fork. Remove from heat and cool completely.
  2. Prepare Yogurt Base: In a medium bowl, combine Greek yogurt, honey, vanilla extract, and a pinch of salt. Whisk until the mixture is smooth and creamy. Taste and adjust sweetness by adding more honey if desired.
  3. Assemble Yogurt Bites: Line a muffin tin with paper liners. Spoon yogurt mixture into each liner, filling about halfway.
  4. Add Blueberry Swirl: Drop spoonfuls of the cooled blueberry swirl on top of the yogurt base in each liner.
  5. Create Swirls: Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt, creating a marbled effect.
  6. Add Toppings: Sprinkle the remaining fresh blueberries over the top along with any optional toppings such as granola, chopped nuts, or shredded coconut as desired.
  7. Freeze: Carefully transfer the muffin tin to the freezer. Freeze for at least 3-4 hours or until the yogurt bites are completely solid.
  8. Serve: Remove the bites from the muffin liners and serve immediately. Drizzle with extra honey on top if you like additional sweetness.
  9. Store: Keep leftover yogurt bites in an airtight container in the freezer for up to 2-3 weeks.

Notes

  • You can use full-fat or non-fat Greek yogurt depending on your preference for creaminess or calorie content.
  • Adjust the sweetness by varying the amount of honey and sugar according to your taste.
  • Optional toppings like granola or nuts add a satisfying crunch and texture contrast.
  • Make sure the blueberry swirl has completely cooled before adding it to the yogurt to prevent melting.
  • If you don’t have a muffin tin, use any small freezer-safe container or silicone molds.
  • Let the bites thaw a few minutes before eating if they are too hard.
