Description

A hearty and delicious Breakfast Biscuit Bubble Up casserole featuring layers of flaky biscuit dough, savory sausage, fresh vegetables, and cheesy egg mixture baked to golden perfection. Perfect for a comforting morning meal that serves a crowd.

Ingredients

Scale

Biscuits

  • 1 can refrigerated biscuit dough (about 8 biscuits)

Egg Mixture

  • 6 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or other preferred herbs (optional)

Filling

  • 1 cup cooked sausage, crumbled (or substitute with sautéed mushrooms and bell peppers for vegetarian)
  • 1 cup shredded cheddar cheese (or a cheese blend such as mozzarella or pepper jack)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup fresh spinach leaves
  • Salt to taste
  • Black pepper to taste
  • Optional herbs: parsley, rosemary, thyme, or chives

Instructions

  1. Prepare the Sausage and Veggies: Cook sausage in a skillet over medium heat until browned and cooked through. If using vegetables such as onions or bell peppers, sauté them alongside the sausage until softened. Drain any excess grease to avoid an oily casserole.
  2. Cut the Biscuits: Open the refrigerated biscuit dough and cut each biscuit into quarters, creating bite-sized pieces that will bubble up while baking.
  3. Mix the Eggs and Milk: In a medium bowl, whisk together the eggs, milk, salt, pepper, and any preferred herbs or seasonings until well combined. This mixture adds richness and helps bind the casserole.
  4. Assemble the Casserole: Lightly grease or spray a 9×13-inch baking dish. Spread half of the biscuit pieces evenly over the bottom. Layer half of the cooked sausage and vegetables on top, then sprinkle half of the shredded cheese. Repeat the layers once more. Pour the egg mixture evenly over the entire dish.
  5. Bake Until Golden and Bubbling: Bake at 350°F (175°C) for 30 to 35 minutes, or until the eggs are set, the biscuits are golden brown, and the casserole is bubbling around the edges. Let cool for a few minutes before serving for best texture.

Notes

  • You can substitute sausage with sautéed mushrooms and bell peppers for a vegetarian version.
  • Use any cheese blend you prefer such as mozzarella or pepper jack for different flavors.
  • Fresh herbs like rosemary, thyme, or chives add an aromatic touch to the dish.
  • Drain excess grease from cooked sausage to keep the casserole from becoming too oily.
  • Allow the casserole to cool for a few minutes after baking for better texture and easier serving.
