Instructions
- Preheat the oven: Set your oven to 160ºC (320ºF) to warm up while you prepare the batter.

- Add wet ingredients: Make a well in the center of the dry mix, then pour in the egg, milk, and olive oil. Stir thoroughly until the batter becomes thick and smooth.
- Incorporate cheese and broccoli: Fold the small squares of Gouda goat cheese and finely diced cooked broccoli into the batter gently, ensuring even distribution without overmixing.
- Fill the muffin tin: Spoon the mixture into a mini muffin tin, filling each cup approximately to the top. This recipe yields about 30 mini muffins.
