Description

These Broccoli and Feta Brownies are a savory twist on a traditional sweet treat, combining tender broccoli florets, sharp feta, and a blend of cheeses baked into a golden, flavorful dish. Perfect as a snack, appetizer, or light meal, this recipe balances fresh herbs and cheeses with wholesome ingredients for a delicious and unique bake.

Ingredients

Scale

Vegetables and Herbs

  • 7 oz broccoli florets
  • 4 scallions, diced
  • 3 tbsp fresh dill, chopped

Dry Ingredients

  • 1¼ cup all-purpose flour (or almond flour/gluten-free flour)
  • 1 tsp baking powder
  • 1 tsp salt (plus 1 tsp for boiling water)

Wet Ingredients

  • 1 cup milk
  • 2 eggs, lightly beaten
  • ¼ cup olive oil
  • 1 tsp olive oil (for sautéing scallions)

Cheese

  • 4 oz feta cheese, crumbled
  • 4 oz mozzarella cheese, shredded
  • 3 tbsp grated pecorino cheese

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Lightly spray an 11×7-inch baking dish with olive oil to prevent sticking.
  2. Prepare the broccoli: Bring a pot of water to a boil with 1 tsp salt. Add the broccoli florets and boil for 1 minute. Remove and place on a paper towel-lined plate to drain and dry thoroughly. Roughly chop the broccoli after drying.
  3. Sauté the scallions: Drain the boiled water and wipe the pot clean. Heat 1 tsp olive oil over medium-high heat, add the diced scallions, and sauté for 1 minute until fragrant. Set aside.
  4. Make the batter: In a large mixing bowl, whisk together flour, baking powder, and 1 tsp salt. Add the milk, lightly beaten eggs, and ¼ cup olive oil. Mix until the batter thickens. If the batter is too runny, gradually add more flour, 1 tablespoon at a time.
  5. Fold in the ingredients: Gently fold the chopped broccoli, sautéed scallions, chopped dill, crumbled feta, and shredded mozzarella into the batter, ensuring an even distribution of ingredients.
  6. Prepare for baking: Transfer the batter mixture into the prepared baking dish and spread evenly using a spatula. Sprinkle the top with grated pecorino cheese and lightly spray with olive oil to encourage browning.
  7. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
  8. Cool and serve: Allow the brownies to cool in the pan for 10 minutes to set before slicing into pieces. Serve warm or at room temperature for best flavor.

Notes

  • You can substitute all-purpose flour with almond flour or gluten-free flour to accommodate dietary preferences.
  • Adjust the salt according to your taste and cheese saltiness.
  • Make sure to dry the broccoli well after boiling to avoid excess moisture in the batter.
  • These brownies can be stored in an airtight container in the refrigerator for up to 3 days and reheated before serving.
  • For a dairy-free version, substitute with vegan cheese alternatives and use a plant-based milk.
