Description

This fresh and flavorful broccoli salad combines crisp broccoli florets with sharp cheddar cheese, crispy bacon, and tangy red onion, all tossed in a creamy, tangy dressing made from red wine vinegar, mayonnaise, and a touch of sugar. Perfect as a side dish or light meal, it can be served immediately or chilled for deeper flavor.

Ingredients

Scale

Dressing

  • 1/4 cup (59 ml) red wine vinegar
  • 1/8 cup sugar
  • 2 teaspoons ground pepper
  • 1 teaspoon salt
  • 2/3 cup (149 g) mayonnaise
  • 1 teaspoon lemon juice

Salad

  • 2 heads chopped broccoli
  • 1 1/2 cup (170 g) shredded cheddar cheese
  • 8 slices crumbled bacon
  • 1/2 cup (80 g) chopped red onion

Instructions

  1. Prepare the dressing: In a large oversized mixing bowl, combine the red wine vinegar, sugar, ground pepper, salt, mayonnaise, and lemon juice. Whip together for about 1 minute until the mixture is smooth and well blended.
  2. Mix the salad ingredients: To the same bowl, add the chopped broccoli, shredded cheddar cheese, crumbled bacon, and chopped red onion. Stir everything together thoroughly until all the salad ingredients are evenly coated with the dressing.
  3. Serve or chill: Using a spatula, transfer the salad into a serving bowl. It can be served immediately or chilled in the refrigerator for enhanced flavor.

Notes

  • For best flavor, refrigerate the salad for at least an hour before serving.
  • Bacon can be cooked in advance and stored in the refrigerator until ready to use.
  • Feel free to add sunflower seeds or dried cranberries for extra texture and flavor.
  • This salad can be made a day ahead and stored in an airtight container in the fridge.
  • Use fresh, firm broccoli heads for the best crunch and taste.
