Instructions

  1. Rinse the Rice: Place the uncooked sushi rice in a fine-mesh sieve and rinse under cold running water until the water runs clear, about 3 to 5 minutes, to remove excess starch and ensure fluffy rice.
  2. Cook the Rice (Rice Cooker Method): Transfer the rinsed rice and 2 1/4 cups water to the rice cooker. Cook according to your rice cooker’s instructions for white rice until fully cooked.
  3. Cook the Rice (Stovetop Method): Alternatively, combine rinsed rice and water in a medium saucepan. Bring to a boil over high heat, then reduce heat to low. Cover tightly and simmer for 18-20 minutes or until water is absorbed. Remove from heat and let simmer, covered, for 10 minutes to finish steaming.
  4. Prepare the Sushi Vinegar: In a small saucepan, combine rice vinegar, sugar, and salt. Warm over low heat, stirring constantly until sugar and salt dissolve. Do not allow the mixture to boil. Remove from heat and allow to cool slightly.
  5. Season the Rice: Transfer the cooked rice to a large non-metallic bowl. Gently fluff to separate grains. Gradually drizzle the sushi vinegar mixture over the rice while gently folding to evenly distribute seasoning. Adjust seasoning by adding more sushi vinegar if desired.
  6. Cool the Rice: Using a fan or a piece of cardboard, fan the rice while gently folding to help it cool quickly to lukewarm and achieve the proper texture and shine.
  7. Prepare the Imitation Crab Meat: Flake the imitation crab meat into bite-sized pieces with your hands or a fork.
  8. Prepare the Avocado: Dice the avocados into small, even cubes. Toss lightly with lemon or lime juice to prevent browning and maintain freshness.
  9. Prepare the Cucumber: Peel, seed, and dice the cucumber into small, even-sized pieces for uniform texture.
  10. Prepare the Carrot: Shred the carrot finely using a box grater or food processor to add subtle sweetness and crunch.
