Instructions

  1. Sauté the onion: In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and cook for 2–3 minutes until softened and translucent.
  2. Add carrots: Stir in the grated carrots and cook for another 2 minutes, allowing the carrots to soften and blend with the onion flavors.
  3. Cook garlic: Add the minced garlic and cook for 30 seconds until fragrant, stirring frequently to avoid burning.
  4. Toast the orzo: Stir in the orzo pasta and toast it for 1–2 minutes, stirring constantly to prevent sticking and to enhance the nutty flavor.
  5. Add broth and seasonings: Pour in the vegetable or chicken broth, then add salt and black pepper. Bring the mixture to a boil over medium-high heat.
  6. Simmer: Once boiling, reduce the heat to low, cover the saucepan, and simmer for 10–12 minutes. Stir occasionally until the orzo is tender and the liquid is fully absorbed.
  7. Finish and serve: Remove the pan from the heat, then stir in the chopped fresh parsley, Parmesan cheese if using, and lemon zest if desired. Serve the orzo warm as a side dish.
