  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Potatoes: Wash and halve the baby potatoes. Place them in a large mixing bowl.
  3. Season the Potatoes: In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, and pepper. Pour this mixture over the potatoes and toss until they’re evenly coated.
  4. Roast the Potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, or until the potatoes are golden brown and crispy on the edges. Toss halfway through for even cooking.
  5. Add the Cheese: Remove the potatoes from the oven and sprinkle the shredded cheddar cheese (and Parmesan, if using) over the potatoes. Return the baking sheet to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
