- 5.2 ounces Boursin cheese

Instructions
- Prepare the Chicken Breast: Cut about a 3-inch wide pocket into the thick side of each chicken breast almost to the other side, being careful not to cut all the way through. Season both sides thoroughly with kosher salt and freshly ground black pepper.
- Heat the Fat: In a large skillet over medium-low heat, heat the oil and butter together. Once melted, increase the heat to medium to prepare for sautéing.
- Sauté Spinach: Add the fresh baby spinach leaves to the skillet and sauté just for about 30 seconds until they wilt but do not burn. Remove the spinach and dab it on a paper towel to remove any excess oil.
- Mix Filling: In a medium bowl, combine the wilted spinach and Boursin cheese until well mixed. Stuff each chicken breast pocket with this cheesy spinach mixture and secure with toothpicks to keep the filling inside.
- Sear the Chicken: Place the stuffed chicken breasts in the hot skillet and cook for 4 minutes or until the underside turns golden brown. Carefully flip the breasts and cook for another 3 minutes until the other side is golden brown as well.
- Finish Cooking: Lower the heat to low, add the dry white wine if using, cover the skillet, and cook for an additional 3 to 5 minutes. The chicken is done when the internal temperature reaches 160°F and no pink remains inside. Remove toothpicks and serve immediately.
