  • 1/3 cup cherry juice (reserved from cherries)
  • 1 teaspoon almond extract


Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9″x5″ loaf pan to prevent sticking and ensure easy removal of the bread.
  2. Mix wet ingredients: In a medium bowl, combine granulated sugar, milk, canola (or vegetable) oil, the large egg, and 1 teaspoon of almond extract. Mix until smooth and well blended.
  3. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to ensure even distribution of the leavening agents.
  4. Incorporate dry into wet: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined to avoid overmixing and a dense bread texture.
  5. Add cherries: Carefully fold the chopped maraschino cherries into the batter, distributing them evenly without breaking the fruit too much.
