Description

Chicken Alfredo Lasagna Roll Ups are a delicious twist on classic lasagna, featuring tender lasagna noodles rolled with a creamy Alfredo sauce, shredded chicken, and a blend of mozzarella and Parmesan cheeses. This comforting casserole is baked until bubbly and golden, making it a perfect family-friendly meal that’s easy to assemble and sure to impress.

Ingredients

Scale

Lasagna Roll-Ups

  • 12 dry lasagna noodles
  • 15 ounces Alfredo sauce (1 jar)
  • 4 cups shredded cooked chicken
  • 2 cups freshly shredded mozzarella cheese, divided
  • ½ cup freshly grated Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • ½ teaspoon lemon zest
  • ½ teaspoon Italian seasoning
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the baking dish: Preheat your oven to 350°F. Spray the bottom of a 9×13-inch casserole dish with nonstick spray. Spread a thin layer of Alfredo sauce on the bottom of the dish and set aside.
  2. Cook the noodles: Boil the lasagna noodles until al dente following package instructions. Drain them and rinse with cold water to prevent sticking.
  3. Make the filling: In a large bowl, mix half of the Alfredo sauce with shredded chicken, ½ cup mozzarella cheese, ¼ cup Parmesan cheese, garlic powder, lemon zest, and Italian seasoning until well combined.
  4. Assemble the roll-ups: Lay the noodles flat on a clean surface and pat them dry with a paper towel. Evenly divide the chicken mixture across each noodle and roll them up tightly. Place the rolls seam-side down in the prepared baking dish.
  5. Add sauce and cheese: Pour the remaining Alfredo sauce evenly over the roll-ups. Sprinkle with the remaining mozzarella and Parmesan cheese.
  6. Bake the roll-ups: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the chicken is heated through and the cheese is melted.
  7. Optional broiling: For a crispy cheese topping, broil for 2-3 minutes at the end of baking. Watch closely to prevent burning.
  8. Serve and garnish: Remove from oven, garnish with fresh parsley if desired, and serve hot for a comforting meal.

Notes

  • Use freshly shredded mozzarella and Parmesan for best melting and flavor.
  • Make sure to pat the noodles dry before assembling to prevent sogginess.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
  • For a lower-calorie version, use reduced-fat cheese and a lighter Alfredo sauce.
  • Chicken can be pre-cooked and shredded ahead to save prep time.
