Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking your chocolate oats evenly.
  2. Mix Ingredients: In a large bowl, whisk the 2 large eggs thoroughly. Add the quick cooking oats, chocolate milk, cocoa powder, vanilla extract, baking powder, melted butter, Greek yogurt, salt, maple syrup, and optional espresso powder. Stir the mixture well until all ingredients are fully combined and smooth.
  3. Add Chocolate Chips: Fold in the chocolate chips gently into the oat mixture, ensuring an even distribution without overmixing.
  4. Pour and Bake: Grease an 8×8 inch baking pan and pour the chocolate oat mixture into it. Place in the oven and bake for 30-40 minutes until the edges and top are set, and a toothpick inserted in the center comes out mostly clean with maybe a little moisture remaining.
