Ingredients
Scale
Yogurt Mixture
- 1 cup fresh strawberries, chopped
- 1 cup plain Greek yogurt
- 2 tbsp honey (or maple syrup)
- ½ tsp vanilla extract
Chocolate Coating
- 1 cup semi-sweet chocolate chips
- 1 tbsp coconut oil
Instructions
- Prepare the Yogurt Mixture: In a bowl, combine the chopped fresh strawberries, plain Greek yogurt, honey (or maple syrup), and vanilla extract. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.
- Form the Clusters: Line a baking sheet with parchment paper to prevent sticking. Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place it onto the baking sheet, shaping it into small clusters. Repeat until all the mixture is used.
- Freeze the Clusters: Place the baking sheet in the freezer for 1-2 hours, or until the yogurt clusters are fully solid and firm enough for dipping.
- Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15-30 second increments, stirring well after each interval, until the chocolate is completely melted and smooth.
- Coat the Clusters: Remove the frozen yogurt clusters from the freezer. Quickly dip each cluster into the melted chocolate, ensuring an even coating. Place the coated clusters back onto the parchment-lined baking sheet.
- Final Freeze: Return the chocolate-coated clusters to the freezer for a few minutes to allow the chocolate coating to set completely.
- Serve & Enjoy: Let the clusters sit at room temperature for about 2 minutes before serving to enjoy a perfect texture with a crunchy chocolate shell and creamy strawberry yogurt inside.
Notes
- You can substitute honey with maple syrup to keep it vegan.
- Use coconut oil for a smoother chocolate coating and added coconut flavor.
- Store the clusters in an airtight container in the freezer for up to one week.
- For extra crunch, sprinkle chopped nuts on the clusters just after dipping in chocolate before they set.
- Make sure the clusters are fully frozen before dipping into chocolate to prevent melting.
