Description

These Cinnamon Roll Bliss Bars are a deliciously healthy twist on the classic cinnamon roll, made with wholesome almond and oat flours, naturally sweetened with coconut sugar and maple syrup. Perfectly spiced with cinnamon and topped with a sweet vanilla glaze, these bars are easy to make and ideal for breakfast or a satisfying snack.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1/2 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Wet Ingredients

  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk

Optional

  • 1/4 cup chopped pecans

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon almond milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking and ease removal.
  2. Mix Dry Ingredients: In a large bowl, whisk together almond flour, oat flour, coconut sugar, cinnamon, salt, and baking soda to evenly combine all dry components.
  3. Add Wet Ingredients: Pour in the melted coconut oil, maple syrup, vanilla extract, and almond milk. Stir the mixture thoroughly until a thick dough forms.
  4. Fold in Pecans: If using, gently fold the chopped pecans into the dough ensuring even distribution without breaking them up too much.
  5. Press Dough into Pan: Transfer the dough to the prepared pan and press it evenly to cover the bottom in a uniform layer.
  6. Bake: Place the pan in the oven and bake for 18-20 minutes, or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
  7. Cool Bars: Allow the baked bars to cool completely in the pan to set properly before glazing.
  8. Prepare Glaze: In a small bowl, mix together powdered sugar, almond milk, and vanilla extract until smooth and pourable.
  9. Glaze and Serve: Drizzle the glaze evenly over the cooled bars, then slice into squares and serve.

Notes

  • For a nut-free option, substitute almond flour with sunflower seed flour.
  • Ensure the bars cool completely before glazing to prevent the glaze from melting.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Adding pecans is optional but adds a nice crunch and flavor.
  • These bars are naturally sweetened and gluten free.
