- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup peanut butter (creamy or crunchy)
- 1 teaspoon vanilla extract
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to place the cookies once shaped.
- Boil Mixture: In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Stir continuously until the mixture reaches a rolling boil.
- Timing is Key: Let the mixture boil for exactly 1 minute, then promptly remove it from the heat to prevent burning.
- Mix in Remaining Ingredients: Stir in the peanut butter, vanilla extract, salt, and quick oats thoroughly until the mixture is fully combined and smooth.
- Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart.
- Let Them Set: Allow the cookies to cool and set at room temperature for about 30 minutes or until they are firm enough to handle.
- Enjoy & Store: Serve the cookies immediately or store them in an airtight container to keep fresh for later enjoyment.
Notes
- Ensure to boil the mixture for the full minute to achieve the proper consistency for the cookies to set correctly.
- Quick oats are preferred for softer texture, but old-fashioned oats can be used for a chewier bite.
- These cookies can be stored at room temperature for up to a week or refrigerated for longer freshness.
- If peanut allergies are a concern, sunflower seed butter can be used as an alternative.
