Description

These Coconut Cashew Chia Energy Bites are a delicious and nutritious snack packed with natural sweetness from dates and raisins, crunchy cashews, and fiber-rich chia seeds. Perfect for a quick energy boost, they require no baking and are easy to prepare and store.

Ingredients

Scale

Main Mixture

  • 10 Medjool dates, pitted
  • 1/2 cup whole cashews
  • 1/3 cup shredded unsweetened coconut
  • 1/4 cup raisins
  • 1/2 orange, zest only
  • 1 pinch kosher salt

Crunchy Add-ins

  • 1/3 cup chopped cashews
  • 1/4 cup shredded unsweetened coconut (additional)
  • 3 tablespoons white sesame seeds
  • 1 tablespoon chia seeds

Instructions

  1. Prepare the Dates: Place the pitted Medjool dates in your food processor. If the dates are dry, soak them in hot water for 10 minutes, then drain. Pulse the dates until a thick, sticky paste forms.
  2. Blend Ingredients: Add 1/2 cup whole cashews, 1/3 cup shredded coconut, 1/4 cup raisins, the zest of half an orange, and a pinch of kosher salt to the food processor. Pulse again for about 30 seconds until large clumps form.
  3. Incorporate Crunchy Add-ins: Transfer the mixture to a medium bowl. Add the remaining 1/3 cup chopped cashews, another 1/4 cup shredded coconut, 3 tablespoons white sesame seeds, and 1 tablespoon chia seeds. Mix thoroughly and press everything together by hand to combine evenly.
  4. Shape the Bites: Line a loaf pan with parchment paper and transfer the mixture into it. Press firmly into an even layer to compact the mixture.
  5. Chill: Place the loaf pan uncovered in the refrigerator. Chill for at least 1 to 2 hours or overnight to allow the bites to firm up properly.
  6. Slice and Serve: Remove from the loaf pan and slice into 1-inch pieces to form individual energy bites ready to enjoy.
  7. Store: Keep the energy bites stored in an airtight container in the refrigerator for up to two weeks to maintain freshness.

Notes

  • Soaking dates if dry helps achieve the right sticky consistency for binding.
  • Use Medjool dates for natural sweetness and softness.
  • You can swap sesame seeds with pumpkin or sunflower seeds as a variation.
  • Adjust the orange zest amount according to your preference for citrus flavor.
  • These bites are perfect for a quick on-the-go snack or pre/post workout energy boost.
