Yogurt Sauce
- 1 cup plain yogurt
- 1/4 cup chopped mint
- 1/4 cup chopped cilantro
- Juice of one lime
Instructions
- Mix Ingredients: In a large mixing bowl, combine the chopped leeks, drained corn, flour, beaten egg, cottage cheese, and a pinch of salt and pepper. Stir well until all ingredients are evenly incorporated to form the fritter batter.
- Heat Pan: Place a non-stick pan over medium-high heat and allow it to heat thoroughly to ensure even cooking and a crispy exterior for the fritters.
- Form Patties: Using about 3/4 cup of the batter per fritter, shape them into patties. Place 2 to 3 patties at a time into the heated pan, taking care not to overcrowd to allow proper cooking and browning.
- Cook First Side: Cook the fritters for 2 minutes on one side without moving them. This step helps develop a golden, slightly charred crust.
- Flip and Press: Carefully flip the fritters and gently press them down with a spatula to increase contact with the pan surface, enhancing browning. Cook for an additional 2 to 3 minutes until the other side is golden and the fritters are cooked through.
- Cook Remaining Fritters: Remove cooked fritters from the pan and continue to cook the remaining batter in batches, repeating the process until all fritters are done.
- Prepare Sauce: While fritters cook, combine plain yogurt, chopped mint, chopped cilantro, and lime juice in a bowl and mix well to create a fresh, tangy yogurt sauce that complements the fritters.
- Serve: Drizzle the yogurt sauce over the warm fritters and serve immediately for the best flavor and texture.
