Instructions
- Preheat and prepare dish. Preheat your oven to 350ºF (175ºC) and spray a 9-inch square baking dish with cooking spray to prevent sticking.
- Cook cabbage and onions. Chop the cabbage and onion finely. In a large skillet over medium-high heat, melt ½ cup butter. Add the chopped cabbage and onion, cooking until tender and translucent. Remove from heat and set aside to cool slightly.
- Combine casserole filling. In a medium mixing bowl, stir together the cream of chicken soup, mayonnaise, and ranch dressing mix until well blended. Add the cooked cabbage and onion mixture along with the cooked chopped bacon. Season with salt and pepper to taste. Mix everything thoroughly, then spread evenly in the prepared baking dish.
- Prepare and add topping. In a small bowl, combine 3 tablespoons melted butter, crushed Ritz crackers, and shredded sharp cheddar cheese. Spread this cracker mixture evenly over the cabbage filling in the casserole dish.
- Bake the casserole. Place the casserole in the preheated oven and bake for 30 minutes or until the topping is golden brown and crispy. Remove from oven and let it rest for a few minutes before serving.
