Ingredients
Scale
Shrimp and Sauce
- 1 package SeaPak Popcorn Shrimp
- 2 tablespoons salted butter
- 1/2 cup buffalo sauce (store-bought or homemade)
- 1/4 cup light ranch dressing
Taco and Toppings
- 8 small corn tortillas (grilled or fried if desired)
- 1 cup shredded red cabbage
- 1/2 cup chopped fresh cilantro
- 1/2 cup shredded green leaf lettuce
- 1/2 cup diced red onion
- 1/4 cup crumbled blue cheese
- 1/2 cup light sour cream
Instructions
- Preheat Oven: Heat your oven to 450°F. This temperature ensures the shrimp will cook quickly and become crispy.
- Bake Shrimp: Spread the package of popcorn shrimp in a single layer on a baking sheet. Bake according to the package instructions, usually about 10–12 minutes, turning once halfway through to ensure even cooking and crispiness.
- Prepare Buffalo Sauce: While shrimp cooks, combine the salted butter, buffalo sauce, and light ranch dressing in a medium saucepan. Heat over medium, stirring occasionally until melted and combined. Then reduce the heat to a simmer to keep warm until the shrimp is done.
- Toss Shrimp in Sauce: When the shrimp is fully cooked and crispy, turn off the heat under the sauce. Add the shrimp to the saucepan and stir gently with a wooden spoon to coat all shrimp evenly with the buffalo sauce mixture.
- Assemble Tacos: Warm the corn tortillas if desired. Lay approximately 7 buffalo-coated shrimp on each tortilla. Top each with shredded red cabbage, chopped cilantro, green leaf lettuce, diced red onion, and crumbled blue cheese. Finish by drizzling light sour cream over the top for creaminess.
- Serve and Enjoy: Serve your creamy buffalo shrimp tacos immediately while warm and enjoy the perfect blend of spicy, creamy, and fresh flavors.
Notes
- If you prefer a spicier taco, add extra buffalo sauce or a dash of hot sauce to your shrimp sauce mix.
- You can substitute corn tortillas with flour tortillas if desired.
- Grilling or frying the tortillas before assembling adds a nice texture and flavor.
- Use light sour cream and ranch dressing to keep the calories and fat content lower.
- Leftover buffalo shrimp can be refrigerated for up to 2 days and reheated gently.
