  • 3 cups crushed corn chips
  • 2 cups shredded cheese (about 3/4 bag)
  • Salt and pepper to taste
  • Nonstick cooking spray


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C) and spray a 9×13 inch baking dish with nonstick spray to prepare the baking surface.
  2. Make the Chicken Mixture: In a large bowl, combine the cooked chicken, softened cream cheese, taco seasoning, cream of chicken soup, rinsed black beans, and diced tomatoes with green chilies. Season with salt and pepper to taste, then stir everything until well combined and creamy.
  3. Layer the Casserole: Spread half of the crushed corn chips evenly on the bottom of the prepared baking dish. Pour and spread the chicken mixture evenly over the chips, then sprinkle 1 ½ cups of shredded cheese on top. Finally, top with the remaining crushed corn chips for added texture.
