- ¼ teaspoon cayenne pepper
- 2 tablespoons lemon juice
Curry Sauce
- 1 tablespoon coconut oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- ½ teaspoon black pepper, freshly ground
- ½ teaspoon salt, or to taste
- ½ teaspoon turmeric
- 2 teaspoons ground coriander
- 1 teaspoon curry powder
- 14½ ounces diced tomatoes
- 13½ ounces coconut milk
- 2 tablespoons cilantro, for garnish
Instructions
- Marinate the Shrimp: In a small bowl, mix salt, black pepper, cayenne pepper, and lemon juice. Add the peeled and deveined shrimp and toss well to coat evenly. Cover and refrigerate for at least 10 minutes to allow the flavors to meld.
- Prepare the Sauce Base: Heat coconut oil in a skillet over medium heat until hot. Add the chopped onions and sauté for 2-3 minutes until they become soft and translucent.
- Add Aromatics and Spices: Stir in minced garlic and ginger along with additional black pepper, salt, turmeric, ground coriander, and curry powder. Cook this mixture for 2-3 minutes, stirring frequently, until it becomes fragrant and well blended.
- Add Tomatoes and Coconut Milk: Pour in the diced tomatoes and coconut milk, then increase the heat to bring the sauce to a rapid simmer. Let it simmer for at least 5 minutes while stirring occasionally to develop the flavors.
- Cook the Shrimp: Add the marinated shrimp into the curry sauce, stirring to coat them well. Cook for about 5 minutes or until the shrimp turn opaque and are fully cooked through.
