Instructions
- Prepare the Tomato Bruschetta: Core and dice the Roma tomatoes into small cubes. Place them in a bowl and add the chopped basil, minced garlic, olive oil, balsamic vinegar, and salt. Gently toss to combine and set aside to marinate, allowing the flavors to meld.
- Make the Creamy Feta Dip: In a food processor, combine the crumbled feta cheese, cream cheese, sour cream, minced garlic, fresh lemon juice, and olive oil. Blend until the mixture is smooth and creamy. Taste and adjust the seasoning by adding salt as needed.
- Assemble and Serve: Transfer the creamy feta mixture to a serving dish. Spoon the marinated bruschetta topping over the dip. Garnish with additional chopped basil, red pepper flakes for a hint of heat, and freshly grated Parmesan cheese. Serve immediately with your favorite crackers, bread, or vegetable sticks.
Notes
- You can prepare the tomato mixture a few hours in advance to enhance the flavors.
- For a spicier kick, increase the amount of red pepper flakes or add a dash of cayenne pepper.
- Serve this dip chilled or at room temperature for the best flavor.
- Try serving with toasted baguette slices or pita chips for great texture contrast.
- Use full-fat cheeses for the creamiest texture and richest flavor.
