Ingredients
Scale
Chicken and Seasoning
- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Sauce and Vegetables
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz baby bella mushrooms, sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the fats: Heat olive oil and butter in a large skillet over medium-high heat until melted and hot, preparing the pan for cooking the chicken.
- Season chicken: Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder to enhance flavor.
- Sear chicken: Place the chicken breasts in the skillet and cook for 5–6 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
- Sauté aromatics: Add the finely chopped onion and minced garlic to the skillet; cook for about 2 minutes until the onion is softened and the garlic is fragrant, infusing the dish with flavor.
- Cook mushrooms: Add the sliced baby bella mushrooms, dried thyme, and dried oregano to the skillet. Cook for 5–7 minutes until the mushrooms are nicely browned and have released their moisture.
- Deglaze skillet: Pour in the chicken broth and bring it to a simmer, scraping the bottom of the skillet to loosen any browned bits for added flavor.
- Make creamy sauce: Reduce the heat to low and stir in the heavy cream and grated parmesan cheese. Simmer gently for 3–4 minutes until the sauce thickens slightly.
- Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy mushroom sauce over them. Warm through for 2–3 minutes to meld the flavors.
- Garnish and serve: Sprinkle fresh chopped parsley over the dish before serving hot for a fresh, vibrant finish.
Notes
- For a dairy-free version, substitute heavy cream with coconut cream and parmesan with a dairy-free cheese alternative.
- Chicken breasts can be substituted with thighs for more juicy meat.
- To thicken the sauce further, you can add a slurry of cornstarch and water.
- Serve this dish over mashed potatoes, rice, or pasta for a hearty meal.
- Make sure not to overcrowd the pan when searing chicken to ensure proper browning.
