Ingredients
Scale
Vegetables and Fruits
- 4 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded (optional)
- 2 medium apples, julienned (Granny Smith or Honeycrisp recommended)
- 1 medium carrot, shredded
- 1/4 cup red onion, thinly sliced (optional)
Additional Ingredients
- 1/3 cup chopped pecans or walnuts (optional)
Dressing
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon salt (to taste)
- 1/4 teaspoon freshly ground black pepper
Instructions
- Prepare the Vegetables and Fruit: Start by finely shredding the green cabbage and red cabbage if using. Julienne the apples using Granny Smith or Honeycrisp varieties for the best flavor. Shred the carrot and thinly slice the red onion, if using. Combine all these in a large mixing bowl.
- Make the Dressing: In a separate bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey or maple syrup, salt, and freshly ground black pepper until smooth and creamy.
- Combine and Toss: Pour the dressing over the cabbage and apple mixture. Toss thoroughly to coat the vegetables and fruit evenly with the dressing.
- Add Nuts: Sprinkle the chopped pecans or walnuts over the coleslaw and give it a gentle toss to distribute them without crushing.
- Chill Before Serving: Cover the bowl and refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld and the dressing to slightly thicken.
- Serve: Serve chilled as a refreshing side dish or topping for sandwiches and burgers.
Notes
- Opt for tart apples like Granny Smith to balance the sweetness in the dressing.
- Red cabbage and red onion add color and extra flavor but are optional.
- For a vegan version, replace mayonnaise with vegan mayo and honey with maple syrup.
- Chilling the coleslaw improves flavor infusion and texture.
- Adjust salt and sweetness levels according to taste.
- Chopped nuts add a delightful crunch, but can be omitted for nut-free diets.
