Description

These Crispy Apple Pie Egg Rolls offer a delightful twist on the classic dessert, combining sweet spiced apples wrapped in crispy egg roll wrappers. Perfectly fried or baked, they make a delicious and easy-to-make treat that’s ideal for parties or cozy nights in.

Ingredients

Scale

Apple Filling

  • 4 cups diced apples (Granny Smith or Honeycrisp)
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Assembly & Cooking

  • 12-15 egg roll wrappers
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Cook the Apple Mixture: In a saucepan, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5-7 minutes until the apples become soft and tender.
  2. Thicken the Filling: Stir in the cornstarch and continue cooking the mixture for an additional 2 minutes until it thickens. Remove from heat and allow the filling to cool completely.
  3. Prepare the Egg Roll Wrappers: Lay an egg roll wrapper on a clean surface positioned diagonally like a diamond shape.
  4. Add Filling: Spoon about 2 tablespoons of the cooled apple mixture onto the lower third of the wrapper.
  5. Fold and Roll: Fold the bottom corner over the filling, then fold in the sides carefully to enclose the apple mixture.
  6. Seal the Egg Roll: Roll the wrapper tightly upwards, sealing the top corner with a little water to secure the roll.
  7. Frying Option: Heat oil in a deep pan or fryer to 350°F. Fry the egg rolls for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
  8. Baking Option: Preheat the oven to 400°F. Place the egg rolls on a baking sheet and spray them lightly with cooking spray. Bake for 15-20 minutes, turning halfway through for even crispiness.

Notes

  • Use tart apples like Granny Smith for a balanced sweet-tart flavor.
  • Ensure the apple filling is fully cooled before wrapping to prevent soggy wrappers.
  • Sealing the egg rolls properly with water prevents them from opening during frying or baking.
  • For a healthier version, opt for baking with cooking spray instead of frying.
  • Serve with vanilla ice cream or caramel sauce for an extra indulgent treat.
