Instructions
- Cook the Apple Mixture: In a saucepan, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5-7 minutes until the apples become soft and tender.
- Thicken the Filling: Stir in the cornstarch and continue cooking the mixture for an additional 2 minutes until it thickens. Remove from heat and allow the filling to cool completely.
- Prepare the Egg Roll Wrappers: Lay an egg roll wrapper on a clean surface positioned diagonally like a diamond shape.
- Add Filling: Spoon about 2 tablespoons of the cooled apple mixture onto the lower third of the wrapper.
- Fold and Roll: Fold the bottom corner over the filling, then fold in the sides carefully to enclose the apple mixture.
- Seal the Egg Roll: Roll the wrapper tightly upwards, sealing the top corner with a little water to secure the roll.
- Frying Option: Heat oil in a deep pan or fryer to 350°F. Fry the egg rolls for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
- Baking Option: Preheat the oven to 400°F. Place the egg rolls on a baking sheet and spray them lightly with cooking spray. Bake for 15-20 minutes, turning halfway through for even crispiness.
