- Preheat the Oven: Preheat your oven to 450°F (232°C) to ensure it is hot and ready for baking the tacos, which will help achieve that crispy texture.
- Cook the Beef: Heat a skillet over medium-high heat. Add the ground beef and cook it thoroughly, breaking it up with a spatula until browned. Stir in the taco seasoning and enchilada sauce, letting the mixture simmer briefly to meld the flavors before removing from heat.
- Prepare the Tortillas: Stack the corn tortillas and wrap them in a damp paper towel. Microwave for 30–60 seconds until soft and pliable to prevent cracking when folding into tacos.
- Assemble the Tacos: Lightly brush one side of each tortilla with olive oil. Place them oiled side down on a baking sheet. On one half of each tortilla, layer 2 tablespoons of shredded cheese, approximately 1/4 cup of the beef mixture, and another 2 tablespoons of cheese. Fold the tortilla over to form a taco shape.
- Bake the Tacos: Arrange all assembled tacos in a single layer on the baking sheet. Bake for 16 minutes until the tortillas are crispy and the cheese has melted beautifully.
