Instructions
- Cook Turkey and Onion: Add ground turkey and diced onion to a large skillet over medium-high heat. Cook, stirring frequently, until the meat is browned and onions are soft, about 5 minutes. Stir in the taco seasoning following the package instructions. Reduce heat and simmer for 10 minutes to let flavors develop.
- Prepare Tortillas: Spread about 1 tablespoon of refried beans on one half of each corn tortilla. Spoon a heaping amount of the cooked turkey mixture on the other half, then sprinkle shredded cheese over the turkey. Do not fold the tortilla yet to prevent cracking.
- Heat Oil and Make Tacos: Heat a large skillet over medium heat. Pour in enough vegetable oil to coat the bottom. Once hot, lay each tortilla flat in the pan. Cook for approximately 30 seconds until the tortilla becomes pliable. Using tongs, carefully fold the tortilla in half.
- Fry Until Crispy: Continue cooking the folded tortillas for 2 to 4 minutes per side, turning carefully until golden and crispy. Remove tacos from the skillet and drain on paper towels. Repeat this process with the remaining tortillas, adding more oil as needed.
- Add Optional Fillings: While tacos are still warm, carefully open each one and add your preferred optional fillings such as shredded lettuce, diced tomato, fresh lime juice, cilantro, sour cream, avocado, and hot sauce, then serve immediately.
