Ingredients
Scale
Main Ingredients
- 1 ½ pounds boneless skinless chicken breasts, cut into large chunks
- 3 cups fresh broccoli florets
- 1 cup uncooked long-grain white rice, rinsed
- 1 small yellow onion, diced
Liquid & Seasonings
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cheese & Butter
- 1 ½ cups shredded sharp cheddar cheese
- 2 tablespoons butter (optional, for extra richness)
Instructions
- Prepare the ingredients: Cut the chicken breasts into large chunks, rinse the long-grain rice, dice the yellow onion, and chop the fresh broccoli into florets.
- Layer in crockpot: Place the chicken, broccoli, rice, and diced onion into the bottom of a 6-quart crockpot, evenly distributing the ingredients.
- Mix the liquid base: In a separate bowl, whisk together the low-sodium chicken broth, condensed cream of chicken soup, garlic powder, onion powder, salt, and black pepper until well combined.
- Add liquid to crockpot: Pour the soup and broth mixture over the layered ingredients in the crockpot. Gently stir to combine everything evenly without disturbing the layering too much.
- Cook: Cover the crockpot and cook on low heat for 4 to 5 hours, or on high for 2.5 to 3 hours, until the rice is tender and the chicken is fully cooked through.
- Add cheese and butter: During the last 15 to 20 minutes of cooking, stir in the shredded sharp cheddar cheese and butter to add creaminess and richness. Cover and allow the cheese to melt thoroughly.
- Finish and serve: Stir the cheesy mixture well before serving. Taste and adjust seasoning if necessary. Serve warm and enjoy your hearty crockpot meal.
Notes
- For faster preparation, use pre-cooked or leftover chicken to reduce cook time by about 1 hour.
- You may substitute frozen broccoli florets, but add them during the last hour of cooking to avoid overcooking.
- To add some heat, include a pinch of red pepper flakes or a dash of hot sauce to the seasoning mix.
