Description

A hearty and flavorful Crockpot Sausage and Potatoes dish featuring smoked sausage, baby potatoes, fresh green beans, and a blend of savory seasonings, all slow-cooked to tender perfection. This easy one-pot meal is perfect for busy days and serves a comforting family-sized portion.

Ingredients

Scale

Meats

  • 2 pounds smoked sausage, sliced

Vegetables

  • 2 pounds baby potatoes, halved
  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • 12 ounces fresh green beans

Other Ingredients

  • 10 ounces diced tomatoes and green chilies (with liquid)
  • 4 tablespoons butter (1/2 stick)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Slice the smoked sausage, halve the baby potatoes, chop the onions, and mince the garlic cloves. Rinse and trim the fresh green beans.
  2. Load Crockpot: Place the sliced sausages, halved baby potatoes, chopped onions, minced garlic, and fresh green beans evenly into the crockpot.
  3. Add Toppings and Seasonings: Pour the diced tomatoes and green chilies along with their liquid over the ingredients in the crockpot. Add the butter in pieces on top, then sprinkle with Italian seasoning, smoked paprika, salt, and pepper according to your taste.
  4. Cook: Cover the crockpot with its lid and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are fork tender and the flavors are well melded.
  5. Serve: Once cooked, stir gently to combine and serve hot as a complete and comforting meal.

Notes

  • For a spicier kick, add a pinch of crushed red pepper flakes along with the seasonings.
  • You can substitute smoked sausage with kielbasa or any smoked sausage variety available.
  • If fresh green beans are not available, frozen green beans can be used; just add them in the last hour of cooking to avoid overcooking.
  • Adjust salt according to the saltiness of your sausage and canned tomatoes.
  • Leftovers store well in the fridge for up to 3 days and reheat easily.
