Scale
Cheesecake Filling
- 1/2 cup cream cheese, softened
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- 1/2 cup strawberries, diced
Quesadillas
- 4 tortillas, 6-inch
- 2 tbsp butter, softened
- 1 tsp sugar
- 1/2 tsp cinnamon
For Serving
- Strawberry sauce for dipping
Instructions
- Prepare the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries to combine without mashing them.
- Assemble the Quesadilla: Spread half of the strawberry cream cheese mixture evenly onto one tortilla, covering the surface.
- Heat the Pan and Add Butter: Heat 1 teaspoon of butter in a pan over medium-high heat, allowing it to melt and coat the surface evenly.
- Cook the First Side: Place the tortilla with the cream cheese side up in the pan carefully to avoid spills.
- Top with Second Tortilla: Spread 1 teaspoon of butter on the second tortilla and place it butter side up on top of the first tortilla, creating a sandwich.
- Cook Both Sides: Cook the quesadilla for 2-3 minutes on each side, flipping carefully, until both sides are golden brown and crispy.
- Finishing Touch: Mix the cinnamon and sugar together and sprinkle this mixture on top of the cooked quesadilla immediately after removing from the pan.
- Repeat and Rest: Repeat the above steps for the second quesadilla. Let both quesadillas sit for 2 minutes to set before slicing into wedges.
- Serve: Serve the warm quesadillas with strawberry sauce on the side for dipping to enhance their flavor.
Notes
- Use room temperature cream cheese for easier mixing and a smoother filling.
- Adjust the sugar quantity in the cream cheese mixture and cinnamon sugar topping to your preferred sweetness.
- Be careful when flipping the quesadilla to keep the filling from spilling out.
- You can substitute strawberry sauce with honey or chocolate sauce for different flavor variations.
- For a healthier option, use low-fat cream cheese and whole wheat tortillas.
