These Decadent Strawberry Cheesecake Quesadillas are a delightful fusion of creamy cheesecake filling and warm, crispy tortillas. Featuring a luscious strawberry cream cheese spread layered between buttered tortillas and lightly pan-fried to golden perfection, this quick and easy dessert is perfect for a sweet treat or an indulgent snack. Served with a side of strawberry sauce, these quesadillas offer a refreshing burst of fruity flavor combined with smooth sweetness.

Ingredients

Scale

Cheesecake Filling

  • 1/2 cup cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup strawberries, diced

Quesadillas

  • 4 tortillas, 6-inch
  • 2 tbsp butter, softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon

For Serving

  • Strawberry sauce for dipping

Instructions

  1. Prepare the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries to combine without mashing them.
  2. Assemble the Quesadilla: Spread half of the strawberry cream cheese mixture evenly onto one tortilla, covering the surface.
  3. Heat the Pan and Add Butter: Heat 1 teaspoon of butter in a pan over medium-high heat, allowing it to melt and coat the surface evenly.
  4. Cook the First Side: Place the tortilla with the cream cheese side up in the pan carefully to avoid spills.
  5. Top with Second Tortilla: Spread 1 teaspoon of butter on the second tortilla and place it butter side up on top of the first tortilla, creating a sandwich.
  6. Cook Both Sides: Cook the quesadilla for 2-3 minutes on each side, flipping carefully, until both sides are golden brown and crispy.
  7. Finishing Touch: Mix the cinnamon and sugar together and sprinkle this mixture on top of the cooked quesadilla immediately after removing from the pan.
  8. Repeat and Rest: Repeat the above steps for the second quesadilla. Let both quesadillas sit for 2 minutes to set before slicing into wedges.
  9. Serve: Serve the warm quesadillas with strawberry sauce on the side for dipping to enhance their flavor.

Notes

  • Use room temperature cream cheese for easier mixing and a smoother filling.
  • Adjust the sugar quantity in the cream cheese mixture and cinnamon sugar topping to your preferred sweetness.
  • Be careful when flipping the quesadilla to keep the filling from spilling out.
  • You can substitute strawberry sauce with honey or chocolate sauce for different flavor variations.
  • For a healthier option, use low-fat cream cheese and whole wheat tortillas.
