Cupcake Batter
- 2 Tbsp peanut butter
- 2 Tbsp oil
- 1 medium banana (mashed)
- 2 Tbsp honey
- ½ cup flour
- ½ tsp baking soda
- ¼ tsp baking powder
Frosting
- 4 oz cream cheese
- ½ cup peanut butter
- 1 tsp milk
Instructions
- Prepare the batter: In a mixing bowl, combine 2 tablespoons of peanut butter, 2 tablespoons of oil, and the mashed medium banana. Stir in 2 tablespoons of honey until the mixture is smooth and well blended.
- Mix dry ingredients: In a separate bowl, whisk together ½ cup flour, ½ teaspoon baking soda, and ¼ teaspoon baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined to form the cupcake batter.
- Bake the cupcakes: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners and fill each about ¾ full with batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Remove from the oven and allow cupcakes to cool completely on a wire rack.
- Prepare the frosting: In a medium bowl, beat together 4 ounces of cream cheese, ½ cup peanut butter, and 1 teaspoon of milk until the mixture is smooth and creamy.
- Frost the cupcakes: Once the cupcakes have cooled thoroughly, spread or pipe the peanut butter cream cheese frosting on top of each cupcake. Serve immediately or refrigerate to set the frosting.
