Cupcake Batter

  • 2 ripe bananas (150g/5oz after peeling, about 2/3 cup mashed)
  • 1/2 cup peanut butter (smooth or creamy)
  • 1/3 cup honey
  • 2 eggs
  • 1 1/2 cups all-purpose or whole wheat flour
  • 2 1/2 tsp baking powder
  • 1/4 cup vegetable, canola, peanut, or olive oil
  • 3/4 cup water

Frosting

  • 500g (1lb) potatoes, peeled and cut into 2 cm (1″) pieces
  • 2 tbsp honey
  • 1/2 cup plain low-fat yogurt (unsweetened) or sour cream
  • 2 – 4 tbsp water (to adjust consistency)

Decoration (Optional)

  • 12 small dog bone biscuits


Instructions

  1. Preheat the oven: Preheat your oven to 180°C (350°F), or 160°C (320°F) if using a fan oven. Line a 12-hole muffin tin with cupcake liners to prepare for baking.
  2. Mash the bananas: Place the ripe bananas into a bowl and mash them thoroughly using a potato masher until the texture is as smooth as possible. This will form the base moisture for your pupcakes.
  3. Combine wet ingredients: Add the peanut butter, honey, and eggs to the mashed bananas. Whisk everything together well until the mixture is smooth and fully incorporated.
  4. Add dry ingredients and liquids: To the banana mixture, add the flour, baking powder, oil, and water. Whisk gently until the batter comes together smoothly without lumps.
  5. Fill cupcake liners and bake: Divide the batter evenly among the cupcake liners, filling each about three-quarters full. Place the tray in the oven and bake for approximately 22 minutes, or until the tops are golden and a skewer inserted into the center comes out clean.
  6. Cool the cupcakes: Remove the cupcakes from the oven and transfer them to a cooling rack. Allow them to cool completely for about 30 minutes before applying the frosting to prevent melting.
  7. Prepare the frosting: Boil or steam the peeled potatoes until tender. Mash the potatoes until smooth, then mix in the honey and plain low-fat yogurt or sour cream. Add water gradually (2 to 4 tbsp) to achieve a smooth, spreadable consistency suitable for frosting.
  8. Frost and decorate: Spread the prepared potato frosting evenly onto each cooled pupcake. If desired, garnish each cupcake with a small dog bone biscuit on top for a decorative and tasty touch.

Notes

  • Peanut butter should be free from xylitol, which is toxic to dogs. Always check the label.
  • Whole wheat flour adds extra fiber, but all-purpose flour works well too.
  • Honey is optional and should be used sparingly because of its natural sugars.
  • You can substitute yogurt with sour cream depending on your dog’s preference and tolerance.
