Description

This Fried Egg Quesadilla is a quick and delicious breakfast or brunch option featuring crispy flour tortillas filled with melty cheese, perfectly cooked fried eggs with runny yolks, and creamy avocado slices. Ready in just 15 minutes, it’s a satisfying and flavorful dish that combines simple ingredients for a comforting meal.

Ingredients

Scale

Quesadilla Ingredients

  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 avocado, sliced

Eggs

  • 2 large eggs
  • Salt and pepper to taste

For Frying

  • 1 tbsp butter (for frying the tortillas and eggs)

Instructions

  1. Heat the skillet: Preheat a non-stick skillet over medium heat and add a small amount of butter to prevent sticking and add flavor.
  2. Fry the eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the egg white is fully set but the yolk remains runny. Carefully remove and set aside. Repeat this step with the second egg.
  3. Assemble the quesadilla base: In the same skillet, place one flour tortilla and evenly sprinkle half of the shredded cheese over it.
  4. Add eggs and avocado: Place the fried eggs over the cheese, then layer with sliced avocado.
  5. Top and cook: Sprinkle the remaining shredded cheese over the avocado and cover with the second tortilla.
  6. Cook quesadilla: Cook for about 2-3 minutes on each side, flipping carefully, until the tortillas turn golden brown and the cheese inside melts thoroughly.
  7. Serve: Remove the quesadilla from the skillet, cut into wedges, and serve hot for the best taste and texture.

Notes

  • To keep the egg yolks runny, cook the eggs just until the whites are set.
  • Use a non-stick skillet to ensure easy flipping and prevent sticking.
  • Feel free to swap cheeses or add salsa or hot sauce for extra flavor.
  • Be gentle when flipping the quesadilla to keep the filling intact.
