Scale
Ingredients
- 2 ripe mangoes, peeled and chopped
- 1 cup plain Greek yogurt (full-fat recommended)
- 2 tablespoons honey or maple syrup
- 1 tablespoon freshly squeezed lemon juice
- Pinch of salt
Instructions
- Blend the mangoes: Place the peeled and chopped mangoes into a blender or food processor and blend until smooth, ensuring there are no lumps.
- Add remaining ingredients: Add the plain Greek yogurt, honey or maple syrup, freshly squeezed lemon juice, and a pinch of salt to the blender. Blend again until all ingredients are fully combined into a creamy mixture.
- Pour into molds: Carefully pour the mango yogurt mixture into popsicle molds, leaving some space at the top to allow for expansion as they freeze.
- Insert sticks and freeze: Place the popsicle sticks into the molds and transfer them to the freezer. Freeze for at least 4 hours or until the popsicles are completely solid.
- Unmold the popsicles: To easily remove the popsicles from the molds, briefly run warm water over the outside of the molds and gently pull out the frozen treats.
Notes
- Use full-fat Greek yogurt for the creamiest texture.
- Adjust the sweetness by adding more or less honey or maple syrup according to taste.
- For an extra tangy flavor, increase the lemon juice slightly.
- Ensure to leave some space in the molds to prevent popsicles from cracking during freezing.
- Store leftover popsicles in an airtight container in the freezer for up to one week.
