Ingredients
Scale
Steak Bites
- 2 pounds boneless sirloin steak (or ribeye, New York strip), cut into 1-inch cubes
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
Roasted Potatoes
- 2 pounds small Yukon Gold or red potatoes, scrubbed and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 2 sprigs fresh rosemary, roughly chopped
Garlic Butter Sauce
- 6 tablespoons unsalted butter
- 6-8 cloves garlic, minced
- 2 sprigs fresh thyme, leaves stripped
- 1 tablespoon fresh parsley, finely chopped, plus extra for garnish
Instructions
- Prepare & Season Potatoes: Preheat the oven to 400°F (200°C) and line a large baking sheet. Wash, pat dry, and cut the potatoes into uniform 1-inch pieces. In a large bowl, toss the potatoes with olive oil, sea salt, black pepper, paprika, cayenne pepper, and chopped rosemary. Spread them evenly in a single layer on the baking sheet.
- Roast Potatoes: Roast the potatoes in the preheated oven for 25-30 minutes until they are tender and crispy, stirring halfway through to ensure even cooking. Remove them from the oven and set aside.
- Prepare & Season Steak: Let the steak sit at room temperature for 15-20 minutes, then thoroughly pat dry. Cut into uniform 1-inch cubes. Toss the steak cubes in a clean bowl with olive oil, sea salt, black pepper, garlic powder, and onion powder to evenly coat.
- Prepare Garlic Butter Sauce: Melt unsalted butter in a small saucepan over low heat. Add minced garlic and thyme leaves, gently simmering for 1-2 minutes until fragrant but not browned. Remove from heat and stir in fresh parsley. Set aside to keep warm.
- Sear Steak Bites: Heat a large heavy-bottomed skillet over medium-high heat with a small amount of olive oil until smoking hot. Sear the steak bites in batches without overcrowding the pan, cooking each side for 1-2 minutes until a brown crust forms and desired doneness is reached. Transfer seared steak to a clean bowl.
- Combine & Finish: Return all the seared steak bites to the skillet and add the roasted potatoes. Pour the garlic butter sauce generously over the steak and potatoes, tossing gently over medium heat for 1-2 minutes to coat everything and meld the flavors. Remove from heat.
- Garnish & Serve: Sprinkle with extra chopped fresh parsley for a burst of fresh color and flavor. Let the dish rest off the heat for 1-2 minutes to allow juices to redistribute. Serve immediately, directly from the skillet for a rustic presentation.
Notes
- For best results, use a heavy-bottomed or cast iron skillet to achieve a beautiful sear on the steak bites.
- Allowing the steak to come to room temperature before cooking helps it cook more evenly.
- Adjust cayenne pepper amount based on preferred spice level.
- Use fresh herbs like rosemary, thyme, and parsley for optimal flavor; dried herbs can be substituted but may lessen freshness.
- This recipe can be made gluten-free by ensuring seasoning blends contain no gluten ingredients.
- For a lower-fat version, reduce butter amount or substitute with a heart-healthy oil, though the flavor will differ.
