Ingredients
Scale
Potatoes
- 1 1/2 lbs baby potatoes (halved)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Steak Bites
- 1 1/2 lbs sirloin steak (cut into 1-inch cubes)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Garlic Butter Sauce
- 4 tbsp unsalted butter
- 4 cloves garlic (minced)
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1/4 tsp red pepper flakes (optional)
Garnish
- 1 tbsp fresh parsley (chopped)
Instructions
- Heat the skillet: Heat 2 tablespoons of olive oil in a large skillet over medium heat to prepare for cooking the potatoes.
- Cook the potatoes: Add the halved baby potatoes cut side down to the skillet. Sprinkle with garlic powder, smoked paprika, salt, and black pepper to season.
- Sauté until tender and golden: Cook the potatoes for 6-8 minutes, stirring occasionally until they are golden brown and tender. Remove from skillet and set aside.
- Prepare the steak bites: Pat the sirloin steak cubes dry using paper towels, then season with salt and black pepper for flavor.
- Heat oil for steak bites: In the same skillet, heat 2 tablespoons of olive oil over high heat to get it hot enough for searing.
- Sear the steak bites: Add the steak cubes in a single layer and sear each side for 2-3 minutes until a golden crust forms. Cook in batches if necessary. Remove steak from skillet and set aside.
- Make garlic butter sauce: Reduce heat to medium and add unsalted butter to the skillet. Once melted, stir in minced garlic, dried thyme, dried parsley, and optional red pepper flakes.
- Sauté aromatics: Cook the butter and herb mixture for 1 minute, stirring frequently, until fragrant.
- Combine all ingredients: Return cooked potatoes and steak bites to the skillet. Toss everything to coat well in the garlic butter sauce. Cook an additional 1-2 minutes to heat through.
- Garnish and serve: Sprinkle chopped fresh parsley over the dish and serve immediately for a flavorful, hearty meal.
Notes
- Cutting the potatoes in half ensures they cook evenly and get crispy on the cut side.
- Patting the steak dry helps achieve a better sear and crust on the meat.
- Working in batches prevents overcrowding the skillet, which could cause steaming instead of searing.
- The red pepper flakes add a mild heat; omit if you prefer no spice.
- Fresh parsley garnish adds a bright, fresh note and color contrast.
