Instructions
- Prepare the Marinade: Whisk together the olive oil, balsamic vinegar, soy sauce, maple syrup, onion powder, minced garlic, oregano, kosher salt, and ground black pepper in a bowl until fully combined.
- Reserve Marinade: Set aside one-third cup of the marinade for later use when finishing the dish on the grill.
- Coat the Vegetables: Place the sliced zucchini, bell peppers, mushrooms, and onion chunks in a large dish. Pour the remaining marinade over the vegetables and toss them thoroughly to ensure even coating.
- Marinate the Vegetables: Allow the vegetables to sit in the marinade for at least 30 minutes, letting the flavors meld and penetrate the vegetables.
- Preheat Grill: Heat your grill to medium heat, preparing it for cooking the vegetables.
- Grill the Vegetables: Place the marinated vegetables directly on the grill or into a grill basket. Grill each side for about 4 minutes until vegetables are tender and have desirable grill marks.
- Finish with Extra Marinade: Drizzle the reserved marinade over the grilled vegetables just before serving to enhance the flavor.
