Instructions
- Prep all ingredients: Slice the chicken breast, onion, and red bell pepper. Shred the cabbage and carrots. Mince the garlic, grate the ginger, and chop the green onions for garnish.
- Cook the noodles: Prepare the lo mein noodles following the package instructions. Once cooked, drain them well and set aside.
- Prepare the sauce: In a small bowl, combine the soy sauce, oyster sauce, and hoisin sauce. Set this mixture aside for later.
- Heat the oil: Warm 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Cook the chicken: Add the sliced chicken breast to the heated skillet and cook until it is no longer pink and cooked through. Remove the chicken from the skillet and set aside.
- Sauté garlic and ginger: If needed, add a bit more oil to the skillet. Then sauté the minced garlic and grated ginger until fragrant, about 30 seconds to 1 minute.
- Cook the vegetables: Add the sliced onion, red bell pepper, shredded cabbage, and shredded carrots to the skillet. Stir-fry until the vegetables are slightly softened but still crisp, about 3-4 minutes.
- Add broth and sauce: Pour in the chicken broth and the prepared sauce mixture. Stir well to combine all ingredients.
- Return chicken: Add the cooked chicken back to the skillet, mixing everything together. Allow the sauce to thicken slightly while stirring continuously, about 2 minutes.
- Toss noodles: Add the cooked lo mein noodles to the skillet. Toss thoroughly to coat the noodles with the sauce and combine them evenly with the chicken and vegetables.
- Season and garnish: Taste and adjust seasoning with salt and pepper as desired. Garnish with chopped green onions before serving.
- Serve: Serve the hot Chicken Lo Mein immediately and enjoy your delicious homemade meal.
