Description

A flavorful and easy-to-make homemade Chicken Lo Mein featuring tender chicken breast, fresh vegetables, and lo mein noodles tossed in a savory soy-based sauce. Perfect for a quick weeknight meal packed with vibrant colors and delicious Asian-inspired flavors.

Ingredients

Scale

Proteins

  • 8 oz chicken breast, sliced

Noodles

  • 8 oz lo mein noodles

Sauces & Liquids

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1/2 cup chicken broth

Vegetables & Aromatics

  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 onion, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrots
  • Green onions for garnish

Oils & Seasonings

  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients: Slice the chicken breast, onion, and red bell pepper. Shred the cabbage and carrots. Mince the garlic, grate the ginger, and chop the green onions for garnish.
  2. Cook the noodles: Prepare the lo mein noodles following the package instructions. Once cooked, drain them well and set aside.
  3. Prepare the sauce: In a small bowl, combine the soy sauce, oyster sauce, and hoisin sauce. Set this mixture aside for later.
  4. Heat the oil: Warm 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  5. Cook the chicken: Add the sliced chicken breast to the heated skillet and cook until it is no longer pink and cooked through. Remove the chicken from the skillet and set aside.
  6. Sauté garlic and ginger: If needed, add a bit more oil to the skillet. Then sauté the minced garlic and grated ginger until fragrant, about 30 seconds to 1 minute.
  7. Cook the vegetables: Add the sliced onion, red bell pepper, shredded cabbage, and shredded carrots to the skillet. Stir-fry until the vegetables are slightly softened but still crisp, about 3-4 minutes.
  8. Add broth and sauce: Pour in the chicken broth and the prepared sauce mixture. Stir well to combine all ingredients.
  9. Return chicken: Add the cooked chicken back to the skillet, mixing everything together. Allow the sauce to thicken slightly while stirring continuously, about 2 minutes.
  10. Toss noodles: Add the cooked lo mein noodles to the skillet. Toss thoroughly to coat the noodles with the sauce and combine them evenly with the chicken and vegetables.
  11. Season and garnish: Taste and adjust seasoning with salt and pepper as desired. Garnish with chopped green onions before serving.
  12. Serve: Serve the hot Chicken Lo Mein immediately and enjoy your delicious homemade meal.

Notes

  • You can substitute chicken breast with chicken thighs for a juicier texture.
  • If you prefer a spicier dish, add chili flakes or chili paste during the sautéing step.
  • For vegetarian options, omit the chicken and use tofu or extra vegetables.
  • Try using low-sodium soy sauce to reduce the salt content.
  • Leftover lo mein can be refrigerated for up to 2 days and reheated gently on the stovetop or microwave.
