  • 2 tbsp extra virgin olive oil

  • 1 tbsp white sesame seeds
  • 1/2 tsp salt flakes
  • Olive oil spray


Instructions

  1. Make the Dough: In a mixing bowl, combine the plain flour, 1/4 tsp cooking salt, and 1 tbsp white sesame seeds. Add 1/3 cup water and 2 tbsp extra virgin olive oil, then stir until a soft dough forms. Knead lightly on a floured surface until smooth.
  2. Roll Out Dough: Lightly flour your countertop and roll the dough out very thinly, about 1/8 inch thick or thinner for crisp crackers. Use a knife or pizza cutter to cut into desired cracker shapes, such as small squares or rectangles.
  3. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  4. Prepare for Baking: Place the cut crackers onto the prepared baking sheet. Lightly spray the surface with olive oil spray. Sprinkle the remaining 1 tbsp white sesame seeds and 1/2 tsp salt flakes evenly over the top.
  5. Bake Crackers: Bake the crackers in the preheated oven for 20-22 minutes or until they are golden brown and crisp around the edges. Keep an eye to prevent burning as thinner crackers bake quickly.
  6. Cool and Serve: Remove crackers from the oven and allow them to cool completely on a wire rack. They will crisp up further as they cool. Store in an airtight container for up to a week.
