Description

  • 1/2 onion, diced
  • 1 red bell pepper, diced

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups Colby Jack cheese, shredded and divided

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • Sliced green onion, for garnish


Instructions

  1. Heat olive oil: Warm the olive oil in a large skillet over medium heat to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add the diced onion, red bell pepper, and jalapeño to the skillet and cook for 3-4 minutes until they become soft and fragrant.
  3. Add corn: Stir in the drained corn and continue cooking for another 2-3 minutes to combine the flavors and heat the corn through.
  4. Add cream cheese and sour cream: Reduce the heat to low, then add the softened cream cheese and sour cream. Stir continuously until the mixture becomes creamy and smooth.
  5. Mix in cheese and seasonings: Add 1 1/2 cups of shredded Colby Jack cheese along with chili powder, garlic powder, paprika, salt, and pepper. Stir until the cheese melts and the mixture is fully combined.
  6. Transfer and top: Pour the hot corn mixture into a baking dish, then sprinkle the remaining 1/2 cup of shredded Colby Jack cheese on top evenly.
  7. Bake the dip: Place the baking dish in a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the cheese on top is bubbly and golden brown.
  8. Garnish and serve: Remove from the oven, garnish with sliced green onions, and serve warm with your favorite chips or vegetables.

Notes

  • For a milder dip, remove all the seeds from the jalapeño before dicing.
