Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Toss Vegetables: In a large mixing bowl, combine all the sliced and chopped vegetables with olive oil, garlic powder, dried oregano, salt, and black pepper. Toss thoroughly to ensure all pieces are evenly coated with the seasoning and oil.
- Arrange on Baking Sheet: Spread the seasoned vegetables out in a single layer on the prepared baking sheet. This helps them roast evenly and caramelize nicely.
- Roast: Place the baking sheet in the oven and roast the vegetables for 20 to 25 minutes. Halfway through the roasting time, stir the vegetables to promote even cooking and prevent burning. The vegetables should be tender and slightly caramelized when done.
