Tofu and Marinade

  • 400g firm tofu, pressed and cubed
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh coriander, chopped
  • 1 tsp ground cumin
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade: In a bowl, mix lemon juice, olive oil, soy sauce, garlic, chopped coriander, ground cumin, chili flakes (if using), salt, and pepper thoroughly to create a well-balanced marinade that will infuse the tofu with vibrant flavors.
  2. Marinate the tofu: Add the pressed and cubed tofu into the marinade and gently toss to coat all pieces evenly. Allow the tofu to soak up the flavors by marinating it for at least 30 minutes, preferably covered in the refrigerator.
  3. Thread the tofu onto skewers: Carefully thread the marinated tofu cubes onto wooden or metal skewers, ensuring they are spaced slightly apart for even cooking.
  4. Preheat the grill or oven: Heat the grill or oven to 200°C (390°F), preparing your cooking surface to achieve nicely charred and golden tofu skewers.
  5. Cook the skewers: Place the tofu skewers on the grill and cook for 10-15 minutes, turning occasionally to ensure all sides become golden brown and slightly charred. Alternatively, bake the skewers in the oven on a lined tray for about 20 minutes, turning halfway through for even cooking.
  6. Serve: Serve the lemon and coriander tofu skewers hot, accompanied by a fresh side salad or steamed rice for a complete and satisfying meal.

Notes

  • Press the tofu well to remove excess moisture for better texture and marinade absorption.
  • If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning.
  • Adjust chili flakes according to your preferred spice level or omit for a milder flavor.
  • Marinate longer if time permits for more intense flavor.
  • These skewers can also be cooked using an air fryer at 200°C for 12-15 minutes, turning halfway.
