Scale
Protein and Dairy
- 2½ cups chopped cooked chicken
- 4 eggs
- 1 cup sour cream
- 4 oz cream cheese (room temperature)
- 1 cup small curd cottage cheese
- 1 cup shredded mozzarella cheese
Seasonings
- ½ tsp garlic salt (or to taste)
- ¼ tsp onion powder
- ¼ tsp white pepper (or to taste)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 325ºF. Lightly spray a 9×9-inch baking dish with cooking spray to prevent sticking.
- Layer Chicken and Cheese: Spread the chopped cooked chicken evenly on the bottom of the prepared baking dish. Sprinkle the shredded mozzarella cheese evenly on top of the chicken.
- Blend Custard Mixture: In the bowl of a food processor, combine the eggs, cream cheese, sour cream, cottage cheese, garlic salt, onion powder, and white pepper. Blend until the mixture is smooth and well combined, forming a creamy custard base.
- Pour Mixture Over Chicken: Pour the blended egg and cheese mixture evenly over the chicken and mozzarella layers in the baking dish.
- Bake the Casserole: Bake the casserole in the preheated oven for about 50 to 60 minutes, or until the mixture is set and the top is lightly golden.
- Cool and Serve: Allow the casserole to cool for 5 to 10 minutes before cutting it into portions for serving. This resting time helps it set properly for clean slices.
Notes
- You can use rotisserie chicken to save time.
- Adjust seasoning to preference, especially the garlic salt and pepper.
- Ensure cream cheese is softened to blend smoothly.
- This casserole reheats well and makes great leftovers.
- For a topping variation, consider adding a sprinkle of parmesan cheese before baking.
