Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking and make removal easy.
  2. Mix Wet Ingredients: In a mixing bowl, whisk together the Greek yogurt, honey or maple syrup, lemon juice, lemon zest, and vanilla extract until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk the almond flour, oat flour, baking soda, and salt to evenly distribute the leavening agent and seasonings.
  4. Mix Together: Gradually add the dry ingredients to the wet ingredients, stirring gently until fully incorporated. Then fold in the poppy seeds to evenly distribute their nutty flavor and texture.
