Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking and make removal easy.
- Mix Wet Ingredients: In a mixing bowl, whisk together the Greek yogurt, honey or maple syrup, lemon juice, lemon zest, and vanilla extract until the mixture is smooth and well combined.
- Combine Dry Ingredients: In a separate bowl, whisk the almond flour, oat flour, baking soda, and salt to evenly distribute the leavening agent and seasonings.
- Mix Together: Gradually add the dry ingredients to the wet ingredients, stirring gently until fully incorporated. Then fold in the poppy seeds to evenly distribute their nutty flavor and texture.
- Bake: Pour the batter into the prepared baking pan, spreading it out evenly with a spatula. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
