Description

Delicious and savory McGriddle Bites combine the flavors of breakfast sausage, eggs, cheddar cheese, and a hint of maple syrup in a convenient mini muffin form. Perfect for a quick breakfast or snack, these bites are baked to golden perfection and can be served with extra maple syrup for dipping.

Ingredients

Scale

Protein

  • 1/2 pound ground breakfast sausage
  • 2 large eggs
  • 1/4 cup cooked and chopped bacon
  • 1/2 cup shredded cheddar cheese

Wet Ingredients

  • 1/4 cup milk
  • 2 tablespoons maple syrup

Dry Ingredients

  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Other

  • Vegetable oil for greasing the pan

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a 24-cup mini muffin tin with vegetable oil to prevent sticking.
  2. Cook Sausage: In a skillet over medium heat, cook the ground breakfast sausage, breaking it into small pieces, until browned and fully cooked. Drain any excess grease and allow the sausage to cool slightly.
  3. Mix Wet Ingredients: In a mixing bowl, whisk together the large eggs, milk, and maple syrup until well combined.
  4. Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking powder, and salt.
  5. Combine Batter: Gradually stir the dry ingredients into the wet ingredients until just combined. Avoid overmixing to keep the bites tender.
  6. Add Sausage, Cheese, and Bacon: Fold in the cooked sausage, shredded cheddar cheese, and chopped bacon evenly through the batter.
  7. Fill Muffin Cups: Spoon the batter into the prepared mini muffin cups, filling each about three-quarters full for even baking.
  8. Bake: Place the muffin tin in the oven and bake for 12 to 15 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.
  9. Cool and Serve: Allow the bites to cool for a few minutes before carefully removing them from the muffin tin. Serve warm with extra maple syrup for dipping if desired.

Notes

  • You can swap the breakfast sausage for turkey sausage for a leaner option.
  • Add a pinch of cinnamon to the batter for a sweeter, aromatic flavor.
  • These McGriddle Bites freeze well; reheat them quickly in the microwave or air fryer for convenience.
