Ingredients
Scale
Protein
- 1/2 pound ground breakfast sausage
- 2 large eggs
- 1/4 cup cooked and chopped bacon
- 1/2 cup shredded cheddar cheese
Wet Ingredients
- 1/4 cup milk
- 2 tablespoons maple syrup
Dry Ingredients
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Other
- Vegetable oil for greasing the pan
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a 24-cup mini muffin tin with vegetable oil to prevent sticking.
- Cook Sausage: In a skillet over medium heat, cook the ground breakfast sausage, breaking it into small pieces, until browned and fully cooked. Drain any excess grease and allow the sausage to cool slightly.
- Mix Wet Ingredients: In a mixing bowl, whisk together the large eggs, milk, and maple syrup until well combined.
- Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking powder, and salt.
- Combine Batter: Gradually stir the dry ingredients into the wet ingredients until just combined. Avoid overmixing to keep the bites tender.
- Add Sausage, Cheese, and Bacon: Fold in the cooked sausage, shredded cheddar cheese, and chopped bacon evenly through the batter.
- Fill Muffin Cups: Spoon the batter into the prepared mini muffin cups, filling each about three-quarters full for even baking.
- Bake: Place the muffin tin in the oven and bake for 12 to 15 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the bites to cool for a few minutes before carefully removing them from the muffin tin. Serve warm with extra maple syrup for dipping if desired.
Notes
- You can swap the breakfast sausage for turkey sausage for a leaner option.
- Add a pinch of cinnamon to the batter for a sweeter, aromatic flavor.
- These McGriddle Bites freeze well; reheat them quickly in the microwave or air fryer for convenience.
