Delicious Middle Eastern Kofta Kebabs made with ground beef or lamb, infused with classic spices like cumin, coriander, and cinnamon, and grilled to perfection. These flavorful kebabs are perfect for a hearty meal served with pita bread, tahini sauce, or a fresh salad.

Meat and Herbs
- 1 lb (450g) ground beef or lamb (or a mix)
- 1 small onion, finely grated
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
Spices & Seasonings
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
Other Ingredients
- 2 tbsp olive oil
- Wooden or metal skewers (if wooden, soak for 30 minutes)
Instructions
- Mix Ingredients: In a large bowl, combine the ground meat, grated onion, minced garlic, parsley, cilantro, and all the spices. Mix thoroughly until all ingredients are well combined and evenly distributed.
- Shape Kofta: Divide the mixture into 6–8 equal portions. Mold each portion firmly around a skewer into a log or oval shape, ensuring it holds together well.
- Preheat Grill: Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Grill Kebabs: Place the skewered kofta kebabs on the grill. Cook for 10–12 minutes, turning occasionally so each side gets nicely browned and the meat cooks through completely.
- Rest Kebabs: Remove the kebabs from the grill and let them rest for a couple of minutes to allow the juices to redistribute inside the meat.
- Serve: Serve the kofta kebabs hot accompanied by pita bread, tahini sauce, or over rice with a side of fresh salad for a complete Middle Eastern meal.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to avoid burning.
- Adjust cayenne pepper to your spice preference or omit it for a milder flavor.
